The $16 namesake drink folds Caribbean rums, passion fruit and lime into salted molasses plus a proprietary amaro-and-spice mixture; the important move is the bitter, saline undertow, which keeps the tropical register from collapsing into sweetness. Across eleven house cocktails, that discipline takes several forms. Permanent Midnight pushes Jamaican and Salvadorian rums toward red banana, pandan and coffee, while El Perdido turns Oaxacan rum, mushroom, Xila and house cola into a strange but intelligible highball. Emerald Eclipse uses snap-pea juice, ginger, gentian and cumin to give mezcal and aged Oaxacan rum a genuinely vegetal route. The breadth is impressive, although elaborate garnish language and long ingredient chains occasionally make the menu feel busier than the underlying drink ideas.
