Current specials identify their authors and then justify the concept through liquid. Sho Watermelon puts tequila, watermelon, blanc vermouth and aloe together; Shapeshifters bends bottled-in-bond rum through walnut and red-fruit liqueurs; One Summer's Day uses clarification to hold Bonal, Empirical Soka, shochu, gin, vermouth and multiple fruit liqueurs in one milk punch. All cost $17, and the ingredient density is matched by an explicit flavor cue rather than left as spectacle. That authorship continues off menu. Bartender's Choice begins with a classic or requested flavor, while the Closet Bar offers scheduled cocktail and spirit tastings. Those formats make the back bar's mastiha, Armagnac, shochu, amaro, specialist rum and modifiers more than an inventory display.
