Brewery Silvaticus builds range from fermentation and service rather than a parade of adjunct flavors. Rex, a 3.7% Czech pale lager, comes through a side-pull faucet to shape its foam and mouthfeel. Scathe draws smoke from beechwood-smoked malt in a 5% golden helles, while Tremolo takes a pilsner base in another direction through dry hopping with Saphir and Hallertau Blanc. Add Quintessential Pilsener, Osito Mexican pale lager and the coffee-and-pumpernickel depth of Oblivion black lager, and six of the ten current pours emerge from lager thinking without tasting like repetitions.
