Deacon Giles cannot reach for somebody else's bottle, and its cocktail program is better for the restriction. Funky Kong turns banana-spiced rum toward pandan, chocolate and espresso; Ambercillin infuses amber rum with lapsang souchong before adding thyme-ginger honey; House Negroni replaces the usual imported architecture with Juniper Point Dry Gin, house amaro and falernum. The rotating laboratory drinks sit beside a broad set of $11-$14 standards, so experimentation does not eliminate direct daiquiris, highballs or a Gold Fashioned. The spirits assignment is smaller but unusually legible. Two $5 flights separate three rums from two gins and vodka, while The Main Six presents the entire core range for $10. That is exceptional access, though not category breadth: visitors seeking whiskey, agave spirits or brandy will not find substitutes because the license limits service to onsite production. Infusion, variable-strength session drinks and comparative flights turn six base spirits into a complete evening rather than a product showroom.
