SingleCut's most famous beer is not necessarily the best way to understand its Astoria taproom. Softly Spoken Magic Spells, the 8.6% orange-and-apricot double IPA, captures the brewery's maximalist hop reputation, but three quieter beers reveal more range. Frequency Lager spends months cold, uses local malt and European hops, and leaves enough rustic grain and citrus zip to justify its Great American Beer Festival silver medal. Dean Mahogany, recently documented at the taproom, revives Pacific Northwest red-ale logic through toffee, biscuit, pine, grapefruit, and marmalade. Then 18-Watt compresses grapefruit, tangerine, apricot, malt, and bitterness into a 5% flagship that can support a full pint rather than a tasting stunt. That sequence - lager, malt-led pale ale, session IPA - is more illuminating than ordering three increasingly strong hazies. The current portfolio also shows serious process in decoction-brewed Marzen and a three-month-lagered Kolsch variation, alongside hibiscus sour, milk stout, coffee cream ale, and West Coast IPA.
