Viale sorts wine by how it behaves before it asks diners to care where it comes from. Light-ish and big-ish headings split whites and reds, making a $48 Primitivo and an $80 COS Cerasuolo legible as different dinner tools rather than rungs on a prestige ladder. The Italian focus reaches Friulano, Verdicchio, Passerina, Falanghina, Grillo, Grechetto, Groppello and Dolcetto; orange Catarratto, chilled Sangiovese and Denny Bini Lambrusco keep texture and temperature in play. Glasses cluster tightly at $14-$16, while every bottle stays at or below $80. Bitterness links the rest of the bar to that list.
