The evidence begins at the taps: Cask Marque accreditation and a staff of mostly Lukr Certified Tapsters signal that dispense is part of brewing, not an afterthought. Patience & Fortitude, a 5.1% Czech-style pilsner, gives Saaz spice and rounded cracker-like malt enough room to register. Hexenkessel, the 4.7% schwarzbier that won New York's 2026 Governor's Cup, keeps dark chocolate and roast dry, light, and drinkable rather than turning dark lager into stout cosplay. Moderance extends that discipline to English pale ale, pairing biscuit and esters with earthy bitterness. Then Gilded Petal, a saison aged fifteen months in foeder with chamomile, proves the traditionalist posture is not timidity: oak, tartness, funk, and flowers are integrated through time rather than syrup.
