Winter Hill Brewing Company currently makes its case through four versions of hop intensity. Johnny Juice IPA puts Simcoe, Amarillo and Mandarina Bavaria behind a low-bitterness target at 7%. Tommy Point IPA layers Citra, Columbus, Centennial, Cascade and Comet at 5.6%. Sun Buzz IPA uses Citra, Azacca and Mosaic for pineapple, mango and peach at 6.5%, while Pool Boi pushes Mosaic, Citra and El Dorado into an 8.2% New England double IPA. Those are not interchangeable hazies, but they do make the board conspicuously IPA-heavy. The counterweight is small rather than absent. Relatively Easy brings wheat-beer territory, Hot Garbage Passion Fruit is a 5% seltzer, and Rando sits at the same ABV. Everything gains from being brewed onsite and served tank to tap. The kitchen sharpens the reason to stay: kimchi latkes, Thai Chili Sprouts, gochujang chicken and a pretzel give bitterness, tropical aroma and alcohol something salty or hot to work against. Current taproom prices and pour sizes are unpublished, and the board would be stronger with a live lager, sour or dark beer.
